First of all, let them know how great you think that they are for even attempting to do something. So many people know that they need to get in shape - but just don't have the drive to do it. The fact that your friend acknowledges that they need to do something is wonderful - and you should let them know that.
Go with them when they purchase new work out clothing. Buying new clothing for walking or running (especially shoes) is always fun. Going with your friend when they are new and so excited about their program will show them how much you support them.
Know what time they are walking or running. If it is a hot day, it would be special for you to meet up with them about halfway through and give them some water. This will help to keep them hydrated, plus will give them a little boost to see your friendly face.
Talk to them periodically about how their training is going. Let them tell you all about it - the good and the bad. You can help celebrate the good things and be there for support and encouragement when they may have had a bad day. I know that when I've had a bad day, sometimes it really helps to just talk it out with someone.

They may have just walked 30 minutes without stopping, run their first mile, completed a road race - it could even be as simple as they completed a whole week on their program.
